Nettles flatbread without yeast

You may have noticed I’m into homemade bread.  And nobody at my house is complaining.  The softness and fresh taste just can’t be beat.  I have a super simple tasty recipe to share today. It was a bit of an experiment, but it turned out super yummy.
I decided to gather some stinging nettles.  I was able to make two different things: flatbread and pasta.
I blanched and pureed the nettles first, keeping the flavor and color green but removing some rawness from the taste.
The nettles gave a rich fragrance and a deep earthy flavor!  I absolutely love this bread! So here’s my recipe for Nettle flatbread.

Ingredients:

  • 100g Nettles (cooked and pureed)
  • 4 tablespoons extra virgin olive oil
  • 300g whole wheat flour
  • 1/2 tablespoon of salt
  • 100 grams of water

Instructions:

In a bowl mix together all your ingredients.  Mix together until forming a dough – continuing to add water as you need. Once mixed turn out onto a floured surface to knead until the dough not to stick as much.  Knead your dough for around 10 min.

Divide dough into 8 equal balls (a pizza cutter worked great for this!)
Using a rolling pin, flatten dough into circles (ideally pretty thin).
Heat a pan over medium high heat and grease lightly.
Place rolled flatbread into pan and cook (1-2minute).
Flip over and cook another minute, pressing down with a spatula if needed. Repeat with remaining dough.
