Pizza dough recipe

Dough preparation is an important stage of pizza making, as well as choosing the right flour. Pizza is cooked at the restaurants in wood-burning ovens at a very high temperature for about 10 minutes. The smoke of the wood also gives pizza dough a distinctive flavor.  It is impossible to reproduce perfectly the same conditions at home, but with my step-by-step recipe, you will be able to make an excellent pizza dough at home. Before starting,  make sure that the room is warm about 22ºC (73ºF).

Ingredients :

(For 3 PIZZA)
500g of flour 200 ml of milk (or water) 1 egg 1 tbs. of sugar Pinch of salt 15 g of yeast (better to use a block of compressed fresh baker’s yeast) 1 tbs. of olive oil.

Instructions:

Warm the milk to 35C and stir in the yeast. Add the flour (50%) to a mixing bowl, then add the yeast with milk plus 1 tsp of sugar. Mix the ingredients from the middle of the bowl until all of the flour is mixed. After a couple of minutes mixing, the dough should be at its early stage of development.  Cover the bowl with cling film and leave in a warm place for 1 hour.
After one hour, add other (50%) of flour, pinch of salt, raw egg, and oil. Mix the ingredients until all of the flour is mixed. Now, we knead the dough so that it can develop the gluten and become firmer. Knead the pizza dough briefly with your hands pushing and folding. Knead just long enough until it no longer sticks to your hands. The dough should be formed into a soft ball. Transfer the dough into the bowl. Cover the bowl with cling film and leave in a warm place for 2 hours.
Add some extra flour and knead the dough again. When the dough has been kneaded for at least 10 minutes, you should have a smooth, silky and elastic dough. Congratulations, your dough now is ready for very good and tasty PIZZA!
