Piadina rolls with salmon and avocado

I thought of making these super easy sandwich rolls. It’s one of my favorite healthy sandwiches to prepare when I am pressed for time. Prepare this Piadina rolls for those days when you feel like you ought to be faster than Superman. I do have a lot of those days and I am always on the lookout for quick healthy meals to feed myself and my family.
If you don’t have a pack of thin and soft flatbread, prepare this super quick and easy piadina wrap without yeast.


1 piadina wrap
1/2 ripe avocado
Juice of half lemon
1 slice of salmon
Olive oil
Salt and Pepper To Taste.


Peel the avocado and mash with a fork into a spreadable consistency. Drizzle it with olive oil, lemon juice, black pepper and salt. Stir to combine.
I use piadina wrap, but you could use a flour tortilla or any other wrap that you’re into or have on hand.
Place 1 piadina wrap on a flat surface. Spread with the avocado mixture.  Then top half of it with the salmon and roll it up real tight. Slice in half.
