Piadina rolls with salmon and arugula

I like it because it is super easy to make and very healthy.
This quick and easy appetizer, with just a few ingredients and even fewer steps, will make entertaining easy without the hassle of fussing over the oven all day and night. So just grab a big platter and fill it with fun little rolls and forget about cooking altogether. Set it into the middle of the table and satisfy hungry houseguests with a super easy Piadina rolls.

Ingredients:

For about 10 rolls:
  • 1 piadina wrap (about 30 cm diameter)
  • 100 g ricotta or philadelphia cheese
  • 3 slices of cured salmon
  • 1 handful of arugula
  • 2-3 teaspoons of lemon juice

Instructions

Place wrap in a cutting board. Mix ricotta or philadelphia cheese with lemon juice and spread it leaving a 2cm border.
Continue to add a layer of salmon and arugula. Fold two sides of wrap over filing, then roll tightly ending seam side down.
Tie each roll with 3 – 4 chives (or you can also secure with toothpicks) then slice them with each chive in the middle of the smaller roll.
