Fig, Prosciutto and mozzarella Cheese Salad

I have an obsession with figs, like a massive obsession. Anyone with a fig tree is my new best friend. The perfect salad to impress, easy to prepare and even easier to eat. I would reason its my favorite combination of ingredients. The combination of flavors and textures really makes it a delight to eat. The figs are sweet, the prosciutto is salty, the salad dressing is a bit tart, and the mozzarella is soft, mild, and seems to balance the salad.

Ingredients:

For the dressing:
1 tbsp extra virgin olive oil 1 tbsp balsamic vinegar 1/2 tbsp fresh squeezed lemon juice 1/8 tsp kosher salt Fresh black pepper, to taste
For the salad:
4 ripe figs, quartered 100 g. fresh mozzarella, sliced and torn into pieces 4 slices quality prosciutto 8 to 10 small fresh basil leaves

Instructions:

Prepare the balsamic vinegar dressing: Combine the oil, balsamic, lemon juice, salt and pepper and whisk. Assemble the salad. Cut a crisscross into the figs, without cutting all the way through. Squeeze the bottom of the fig a bit to expose the pink flesh inside. Place the figs on a large platter. Weave strips of prosciutto around the figs and the rest of the plate. Top with mozzarella cheese and basil. Just before serving, lightly dress the salad with the dressing. Alternatively, you can leave the dressing on the side so that people can choose the amount of dressing, if any, they’d like on their salad. Enjoy.
