Chocolate chili barbecue sauce

It may be the last few weeks of summer but there is still plenty of grilling to do! Entice your party guests with a barbecue sauce made with a secret ingredient: chocolate! The perfect balance of sweet & spicy. This is the best  barbecue sauce you will ever try!

Inhredients:

2 tbsp. olive oil
1 small onion, very finely chopped
1 1/2 cups ketchup
3/4 cup chicken broth
1/4 cup brown sugar
1/4 cup fresh lime juice
4 tsp. Worcestershire sauce
1/2 tsp. salt
1 bar (3.5oz) Lindt EXCELLENCE Chili Dark Chocolate, chopped

Method:

Heat oil in a medium saucepan set over medium heat. Cook onion for 3 minutes or until softened. Stir in ketchup, chicken broth, brown sugar, lime juice, Worcestershire and salt; bring to a boil.
Simmer for 20 minutes or until thickened. Remove from heat. Whisk in chocolate until melted. Adjust seasoning to taste.

Tip: Use barbecue sauce to baste ribs, pork chops or chicken during the last few minutes of grilling. Because this sauce contains sugar, it can burn at higher temperatures. It should be used only when the meat is over low heat or put on at the end of cooking.

Transfer in a glass jar and keep in the fridge up to a month or preserve for longer (water-bath canning works best).
